Pan Seared Chilean Sea Bass

- -2 Chilean Sea Bass 8oz
- -Ghee
- -Avocado Oil
- -Lemon
- -Capers
- -Salt & Black Pepper
- Pat your sea bass fillets dry and coat on both sides with 1 tbsp avocado oil. Sprinkle the fillets with salt and pepper.
- Preheat your oven to 425. Heat the remaining 1 tbsp avocado oil in a cast iron (or another oven-safe skillet) over medium-high heat. When the p

- Pat your sea bass fillets dry and coat on both sides with 1 tbsp avocado oil. Sprinkle the fillets with salt and pepper.
- Preheat your oven to 425. Heat the remaining 1 tbsp avocado oil in a cast iron (or another oven-safe skillet) over medium-high heat. When the pan is nice and hot, add the fillets, with the skin side down (if they have skin). Let them cook, untouched, for 5 mins. Flip and cook for an additional 5 minutes. It helps to use a metal spatula to prevent the bottom of the fish from sticking to the pan!
- Transfer the skillet to the oven and cook for an additional 5 minutes. The fish should flake easily with a fork at this point.
- Melt the ghee (or vegan butter) in a saucepan on the stove, or in the microwave. Stir in the lemon juice and capers. Serve the fish over some cauliflower mash and spoon some of the lemon butter caper sauce over top. Enjoy!

- -1 Teaspoon B pepper & Garlic powder

- Combine the dry seasoning
Preheat broiler/oven or grill to medium-high heat. Mix together all dry seasoning ingredients until well combined. - Season the halibut

Rinse any ice glaze from frozen Alaska Halibut under cold water; pat dry with a paper towel. Place halibut on a spray-coated or foil-lined baking sheet. Brush butter onto top surfaces of halibut and sprinkle with 1/2 teaspoon seasoning mixture.
Note: For best results with frozen fish, cook halibut 4 minutes before adding butter and spices. - Grill or broil the halibut
Grill or broil halibut 5-7 inches from heat for 13 minutes for frozen halibut or 8 minutes for fresh/thawed fish. Cook just until fish is opaque throughout. Enjoy!

- 4 tbsp. butter
- 1/2 c. lime juice
- 1/4 c. honey
- 2 garlic cloves, minced
- 2 tbsp. Chopped cilantro
- Season Salmon with salt, pepper and heavy butter. Heat grill and place salmon on grill flesh side down. Cook for 8 minutes then flip and cook on other side until salmon is cooked through, 6 minut

- 4 tbsp. butter
- 1/2 c. lime juice
- 1/4 c. honey
- 2 garlic cloves, minced
- 2 tbsp. Chopped cilantro
- Season Salmon with salt, pepper and heavy butter. Heat grill and place salmon on grill flesh side down. Cook for 8 minutes then flip and cook on other side until salmon is cooked through, 6 minutes more. Let rest 5 minutes.
- Meanwhile make sauce: In a medium saucepan over medium heat, add butter, lime juice, honey, and garlic. Stir until butter is melted and all ingredients are combined. Turn off heat and add cilantro.
- Pour sauce over salmon and serve with chop cilantro. Enjoy!
